Pink, fluffy, boozy pancakes 😍 The perfect recipe to celebrate Galentine and Valentine’s Day in style.
Tequila Rose is a delicious mix of strawberry cream and premium tequila. Sounds amazing? It’s really! It tastes amazing, like an adult strawberry milkshake. I find the tequila taste in this drink mild, it is more of a creamy liqueur than it can simply be enjoyed without mixing, just poured onto some ice. As such, it’s perfect for many recipes.
Tequila Rose gave me a few samples and asked me to create a recipe for Valentine’s Day, and here’s what I came up with: easy-to-make, fluffy pancakes that are just delicious.
These pancakes have a subtle creamy strawberry flavor from the Tequila Rose and can be paired with your favorite toppings. I indulged myself with my toppings: whipped cream, strawberries, blueberries, dried cranberries, and marshmallows. A delightful combination.

You need this:
2 eggs 2 tbsp sugar 3/4 cup buttermilk 1/4 cup tequila rose 1 + ¼ cups all-purpose flour 2 teaspoons baking powder 1 teaspoon vanilla extract Pink food coloring (optional)
Whisk 1- 2 eggs and 2 tablespoons of sugar
2- Add buttermilk, tequila rose, flour, baking powder and vanilla extract. Beat until the batter is smooth. Add food coloring if desired.
3- Heat a lightly oiled non-stick pan over medium heat.
4- Carefully pour the batter onto the hot pan. Turn around when bubbles begin to burst.

I couldn’t resist creating another recipe with Tequila Rose, it’s just so delicious and a perfect ingredient for making goodies!
This no-bake recipe is foolproof, all you need is a food processor and a few ingredients. For a tray of deliciously juicy Tequila Rose Shortbread Bites you will need:
10x shortbread biscuits 3 – 4 fresh strawberries 2 tablespoons Tequila Rose 120g white chocolate (melted) Optional – sprinkles for spreading
Put the shortbread, strawberries, and tequila rose in a processor. Roll the mixture into small balls and put in the refrigerator for 30 minutes. Melt the chocolate in a bowl, carefully dip each ball (I used a toothpick) and quickly add all the toppings if you like. Chill until set.
These pretty bites can be kept in the refrigerator and will stay fresh and beautiful for a few days!
